“With Native Breeds on the Mountains to Sea Trail along the Vistula River”

Operation “With Native Breeds on the Mountains to Sea Trail along the Vistula River” is conducted by the National Research Institute of Animal Production in partnership with the Małopolska Agricultural Advisory Centre in Karniowice

Implementation period: 1 June 2022 – 31 October 2023

Purpose of the operation

Developing regional tourist and culinary offer based on native breeds of animals, representing local breeding heritage and processing potential. Making the participants better aware of the importance of local and regional products from native breeds, along with food certification, will increase the attractiveness of rural areas by using their enormous natural, cultural and culinary resources. What is more, thanks to the promotion all those interested will familiarize themselves with the issue of short supply chains, which allow small family-run processing plants to make their presence felt on the market and to promote regional culinary heritage.

Forms of operation implementation

1. Sixteen one-day educational and culinary workshops for 240 people from eight voivodeships (two workshops per voivodeship). The workshops will be held in catering facilities located along the tourist and culinary trails in the regions with native breeds of farm animals.
2. Production of the publication “Culinary Heritage of Polish Native Breeds” in 500 copies. In the publication, regional breeding in the context of the development of rural tourism and culture will be presented from a historical perspective. The first part will discuss native breeds of farm animals and quality of the raw materials obtained from them. The second part will contain a collection of recipes for dishes/products based on the raw material from the native breeds, and, where possible, a historical background to specific dishes will be presented.
3. A Poland-wide conference for 80 people, summarizing the workshops and presenting local products, cultural, culinary and breeding heritage from the regions participating in the operation. Those attending the presentations will be able to taste traditional products/dishes made from the raw material derived from the native breeds.

During the conference, examples of using raw material from native breeds in other countries will also be presented.

Target group

The operation is addressed to inhabitants of the Małopolskie, Śląskie, Podkarpackie, Świętokrzyskie, Lubelskie, Mazowieckie, Kujawsko-Pomorskie and Pomorskie voivodeships. These include farmers, representatives of rural housewives’ associations, food service industry, associations, self-government units, science, as well as entrepreneurs.

Expected outcomes

1. Participation of at least 240 people in educational and culinary workshops, at least 80 people in the conference, and production of a publication in 500 copies.
2. Participants acquire knowledge and skills necessary for developing the region’s tourist and culinary brand.
3. Target groups will increase their knowledge on the high quality and availability of local/traditional /organic products from native breeds.
4. Supply chains will be shortened thanks to the integration of rural inhabitants and the established contacts.

Other possible outcomes will be an increase in the population of farmed animals of native breeds; growth of the processing potential of the plants and introduction of a new range of products, which will maintain or even increase employment; strengthening the economic and social ties as the entities will operate in a production and sales network under a common local brand.
